Ingredients
  

For the sautéed beef

  • 1 lb beef, minced Use your choice of beef, such as ground beef or diced steak.
  • 2 cloves garlic, minced Fresh garlic adds a nice flavor.
  • 1 tsp cumin Enhances the overall flavor.
  • 1 tsp chili flakes Adjust based on spice preference.

For the roasted vegetables

  • 1 head cauliflower, chopped
  • 2 medium sweet potatoes, chopped Cut into similar sizes for even cooking.

For the bowl assembly

  • 1 cup wild rice, uncooked Cook according to package instructions.
  • 2 cups kale, chopped Fresh kale adds nutrients.
  • 1/2 cup cranberries Dried cranberries for sweetness.
  • 1/4 cup almonds, sliced Adds a crunchy texture.
  • 3 tbsp tahini dressing Can substitute with hummus or olive oil and lemon dressing.

Instructions
 

Cooking the Beef

  • Sauté the beef in a pan with minced garlic, cumin, and chili flakes until browned and flavorful.

Roasting the Vegetables

  • Chop cauliflower and sweet potatoes. Spread them on a baking sheet and roast at 400°F (200°C) for about 20 minutes, or until golden and tender.

Prepare the Rice

  • Cook the wild rice according to the package instructions.

Make the Salad

  • Mix fresh kale, cranberries, and almonds in a bowl, then drizzle with tahini dressing.

Assemble the Bowl

  • Place a scoop of wild rice in a bowl, add sautéed beef and roasted vegetables on top, and finish with the kale salad.

Notes

To store leftovers, place them in an airtight container in the fridge for about 3 days. Reheat in the microwave or on the stove. Customize vegetables based on what you have available.
