  • 200 grams Rice noodles Use any type of rice noodles.
  • 2 cups Shredded cabbage
  • 2 medium Carrots, sliced
  • 1 medium Bell pepper, sliced You can use any color.
  • 4 tablespoons Peanut butter Smooth or crunchy, as per preference.
  • 3 tablespoons Soy sauce Ensure it's vegan if necessary.
  • 1 teaspoon Chili flakes Adjust spice level to taste.

Cooking the Noodles

  • Cook the rice noodles according to the package instructions until they are tender.

Sautéing the Vegetables

  • While the noodles cook, heat a pan over medium heat.
  • Sauté the shredded cabbage, sliced carrots, and bell peppers until they are tender.

Making the Sauce

  • In a bowl, mix peanut butter, soy sauce, and chili flakes to create a creamy and spicy sauce.

Combining Ingredients

  • Once the noodles are done, drain them and toss them with the sautéed veggies.
  • Pour the peanut sauce over the noodles and veggies, and mix everything well.
  • Serve hot, optionally garnished with extra chili flakes or chopped peanuts.

Notes

To store leftovers, let the noodles cool completely. Place them in an airtight container and store in the fridge for up to 3 days. Reheat in the microwave or on the stovetop. Feel free to adjust the spice level and add other protein sources like chicken, shrimp, or tofu.
