Ingredients
  

For the Shrimp

  • 1 lb Shrimp Make sure they are deviled and fresh.
  • 1 teaspoon Chili flakes Adjust based on spice preference.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Lemon juice Freshly squeezed.

For the Sweet Potato Mash

  • 2 large Sweet potatoes Tender and easy to mash.
  • 2 tablespoons Butter For mash.
  • 1/2 teaspoon Cinnamon For added flavor.

For the Rice

  • 1 cup Jasmine rice Cook according to package instructions.

For the Salad

  • 2 cups Spinach Fresh.
  • 1 medium Avocado Diced.
  • 1/2 cup Walnuts Chopped.
  • 3 tablespoons Honey-mustard dressing To drizzle over the salad.

Instructions
 

Preparation

  • Sauté shrimp with chili flakes, garlic, and lemon juice until cooked through.
  • Boil sweet potatoes until tender, then mash with butter and cinnamon.
  • Cook jasmine rice according to package instructions.
  • Prepare the salad by mixing spinach, diced avocado, and walnuts, then drizzle with honey-mustard dressing.

Serving

  • Serve the shrimp over the sweet potato mash with rice and salad on the side.

Notes

Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat gently on the stove or microwave. Feel free to switch up the veggies or protein as desired.
