  • 2 pieces boiled eggs (soft or hard-boiled) Cooked to preferred consistency.
  • 1/2 cup boiled corn on the cob (cut into rounds) Boil until tender.
  • 1/2 cup cherry tomatoes, halved Fresh and sliced.
  • 1/4 cup sliced cheese (cheddar or mozzarella) Choose your preferred cheese.
  • 1/2 cup fresh blueberries Rinsed and ready to serve.

Preparation

  • Boil the eggs to your preferred consistency, then peel and slice them in half.
  • Boil the corn until it’s tender.
  • Slice the tomatoes and cheese.

Serving

  • Arrange everything beautifully on a plate and serve fresh.

Notes

For a heartier meal, pair with whole grain toast and drizzle with olive oil or your favorite dressing. Best served fresh. Store leftovers separately in an airtight container in the refrigerator for a couple of days.
