  • 1 cup Quinoa (cooked) Make sure it's cooked and cooled
  • 1 medium Mango (diced) Fresh or ripe mango works best
  • 1 medium Cucumber Peeled and diced
  • 1 medium Red bell pepper Diced
  • 2 tablespoons Lime juice Freshly squeezed is preferred
  • 1 teaspoon Chili flakes Adjust to taste

Preparation

  • In a large bowl, mix the cooked quinoa with diced mango, cucumber, and red bell pepper.
  • Drizzle lime juice over the top.
  • Sprinkle chili flakes for that spicy zing.
  • Toss everything together for a refreshing kick!

Notes

This salad is best served chilled or at room temperature. It’s great for meal prep, so make a big batch and save some for later. Store leftovers in an airtight container in the fridge and consume within 2-3 days.
