Ingredients
  

For the chicken and rice

  • 4 pieces grilled chicken breasts You can substitute chicken thighs for juicier meat.
  • 2 cups jasmine rice Cook until fluffy.
  • 1 cup green beans Sauté until tender but still bright.
  • 1 cup carrots Sautéed until tender.

For the sauce and toppings

  • 1 cup homemade teriyaki sauce Can be made in advance.
  • 2 cups romaine lettuce Use chopped or shredded.
  • 1 cup mandarin oranges Canned or fresh.
  • 2 tablespoons sesame seeds For garnish.
  • 1/4 cup ginger dressing For drizzling.

Preparation

  • Marinate the chicken in homemade teriyaki sauce to soak up the flavor.
  • Cook the jasmine rice until fluffy.
  • Sauté the green beans and carrots until they are tender but still bright in color.

Cooking

  • Grill the marinated chicken until fully cooked and juicy.

Serving

  • In a bowl, combine romaine lettuce, mandarin oranges, and sesame seeds. Drizzle with ginger dressing.
  • Serve everything together: a scoop of jasmine rice topped with sliced grilled chicken and sautéed veggies.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Simply reheat in the microwave.
