  • 1 medium Onion, chopped Use yellow or white onion.
  • 1 cup Bell peppers, diced Any color bell pepper can be used.

For the mashed cauliflower

  • 1 head Cauliflower, chopped Fresh or frozen can be used.
  • 2 tbsp Butter Adjust according to taste for creaminess.
  • 1/4 cup Parmesan cheese, grated Substitute with other cheese if desired.

For serving

  • 1 cup Brown rice Cook according to package instructions.
  • 2 cups Romaine lettuce, chopped Provides crispness to the salad.
  • 1 cup Cucumbers, diced Add a fresh crunch to the salad.
  • 1/2 cup Feta cheese, crumbled Optional for additional flavor.
  • 1 tbsp Lemon vinaigrette To dress the salad.

Instructions
 

Preparation

  • Sauté ground turkey with minced garlic, chopped onion, and diced bell peppers in a pan until fully cooked.
  • Boil cauliflower until tender, then mash with butter and parmesan cheese.
  • Cook brown rice according to package instructions.
  • For the salad, combine chopped romaine, diced cucumbers, and feta cheese, then drizzle with lemon vinaigrette.

Serving

  • Serve the turkey stir-fry alongside the mashed cauliflower and brown rice, with the salad on the side.

Notes

Store leftovers in an airtight container in the fridge for 3 to 4 days. Reheat on the stove or microwave before serving. Adjust seasonings and ingredients based on personal preference for additional flavor.
